Pasta a la Vodka

Ingredients:

  • Freshly chopped garlic
  • 1 shallot
  • 2 tablespoons of Butter
  • 3 tablespoons of tomato paste
  • 1 cup of vodka
  • ½ cup of heavy cream 
  • Grated Parmesan
  • Salt
  • Pepper
  • Italian seasoning 

Melt your butter on medium heat in a pan. Add in your garlic and shallot and saute until fragrant. Do not burn your garlic. Add in your seasonings and mix until combined. Add in your tomato paste. Incorporate and cook for around 3 minutes. Add your vodka. Mix and then simmer the vodka down about halfway. Add in your cream. Mix and bring to a simmer. Add in your parmesan. Once mixed, add in your pasta with a couple of tablespoons of pasta water and enjoy!

Breaded Chicken

Ingredients:

  • 1 chicken breast, butterflied 
  • Flour
  • 2 eggs
  • Italian Bread Crumbs

Filet your chicken breasts by cutting them in half vertically. You should have two thinner chicken pieces. Cover the breasts in flour, then mixed egg, and bread crumbs in that order. Add to a pan at medium heat. Brown each side for 5-7 minutes until the internal temperature reaches 160. Let rest for 5 minutes to reach a fully cooked temperature of 165.
